Fabienne Lassalle
Assistant Director General of the sea rescue NGO SOS MEDITERRANEE France.
A graduate of Sciences Po Grenoble and holder of a Master’s degree in Development, Cooperation and Humanitarian Action (University Panthéon-Sorbonne), Fabienne Lassalle has coordinated development projects funded by international donors - the European Commission, World Bank, Regional development banks - in Africa, Asia and Latin America. She was also Associate Director of Gondwana, a consulting firm for the protection of biodiversity for businesses and local communities. In 2015, she participated in the creation of the association SOS MEDITERRANEE for which she became the assistant director. SOS MEDITERRANEE is a European civil association which seeks to save lives in the Mediterranean Sea, protect survivors on board its rescue ship and testify about the situation at sea and the multiple faces of migration.
Gérard Feldzer
A former airline pilot, the former Director of the Museum of Air and Space of Le Bourget. Ile-de-France Regional Adviser on the Europe Ecologie-lesVerts list from 2010 to 2015.
In 1993, he broke the record of distance during an attempt to cross the Atlantic in a pedal-powered airship with his friend Nicolas Hulot.
He is the founder of the association Les Ailes de la Ville, which works to train and integrate young people from the suburbs through the construction of aircraft and flying machines.
He is also the co-founder of the association and Vice-president of the rural development NGO Zebunet, for the maintenance of peasant agriculture and the development of family breeding activities (microcredit, capacity development, agroecological projects, and training programs in Vietnam, West Africa and Madagascar).
Olivier Roellinger
A cook in Cancale, founder of Relais et Châteaux, les Maisons de Bricourt and Entrepôts Epices, vice-president of the association Relais et Châteaux.
Passionate about spices, he seeks the best quality while favoring organic culture and fair trade. "I became a cook by a taste for adventure, travel, others (…); I became a cook because I am from Cancale, a region where you grow up surrounded by sailors returning from the other side of the world."
Committed to preserving the marine ecosystem and fishing resources, he also endorses supporting organic peasant agriculture, the liberation of seed from industrialists’ domination and the introduction of the right for all to healthy and sustainable food. Along with Carlo Petrini, his commitment is notably embodied within the Slow Food international network, which campaigns for the preservation of the environment, the right to quality food for all, and fair remuneration for producers. Following Monsanto group’s takeover by Bayer, he signed an "open letter against the invasion of agrochemicals in our plates", which evokes a serious threat to biodiversity.
Serge Papin
Former CEO of the cooperative association Système U, founder of the economic interest group Ecovalor (cardboard and plastic waste recovery).
He campaigns for mindful consumption and against food waste. At Système U, he put an end to the marketing of glyphosate and products containing palm oil. He was rewarded with the Trophy of organic excellence in 2012.
During the 2017 food summit, which brought together producers, industrial distributors, consumers, elected representatives, and social partners around two projects: the creation and distribution of value; healthy, safe and sustainable food which is accessible to all, he co-chaired the workshop "How to make the purchase prices of agricultural products more profitable for farmers."
He is the author of several books, including Consommer Moins, Consommer Mieux, co-written with the ecologist Jean-Marie Pelt, (Autrement, 2009), Pour un nouveau pacte alimentaire (Le Cherche Midi, 2012), Et maintenant, on fait quoi? (Le Cherche Midi, 2014), and Du panier à l’assiette, co-written with Périco Légasse (Solar, 2018).

She regularly intervenes in many seminars and with NGOs.
